Boil 1.5 liters of water. Add 2 dessert spoons of salt.


Chop garlic finely. 


Chop bacon into strips of half a centimeter thickness. 


Cut the chervil in a random way.


Take Castellane pasta into the boiling water. Boil for 9 minutes, over medium heat, stirring occasionally.

Just before castellane’s cooking process ends, take a pan to the stove. Add 1 tablespoon of olive oil and sauté the garlic on medium heat for 30 seconds. 


Add white wine vinegar. After 1 minute, start to sauté bacons. After cooking for 2 – 3 minutes, take boiled castellane into the pan.

Add half of Parmesan and butter on the pasta. Cook for 2 minutes stirring over low heat. 


When Bacon Castellane is ready, serve with the remaining parmesan and chervil.
