To give noodle shape to the zucchini;
Slice zucchinis lengthwise and maximum half a centimeter thickness. (It will be useful to cut thinner if possible.) Slice again lengthwise zucchini slices thinly.
Finely mince or grate the garlic.
Finely slice the basil.
Get a pan on the stove. Add 1 tablespoon of olive oil. When the oil warms up over medium heat, sauté garlic and basil for 30 seconds.
Add the tomato purée and cook for 1-2 minutes. Add zucchini and totally mix with the sauce. Adjust the salt and pepper. On medium heat, stirring occasionally, continue cooking for 8-10 minutes until they are tender and cooked.
For the salad; squeeze the lemon. Wash the greens in cold water and rinse. Divide them into bite-size pieces with your hand. Mix the greens, capers, lemon juice, 1 tablespoon of olive oil with a pinch of salt and pepper in the mixing bowl.
When the zucchini is cooked, pour half of the parmesan to the pan and mix it with zucchini noodles.
Decorate Zucchini Noodle with the remaining parmesan on the plates and serve with the salad.
