Set your oven to 200 degrees and run it.
Chop onion into small cubes.
Divide tomatoes into two or four.
Chop spinach in finger thickness. Chop the basil into thin strips.
Take a pan on the stove. When it warms up over medium heat, add 1 tablespoon of olive oil and start to sauté onions that you chopped. Sautée for 2 minutes and add spinach. Cook stirring for 2 more minutes and then take the pan aside.
Place spinach, cherry tomatoes, basil and lor cheese into the ovenware you will use.
In a mixing bowl, beat the eggs with a pinch of salt and pepper for 1 minute.
Add beaten eggs to the ovenware and bake for 10 – 12 minutes in the oven preheated to 200 degrees.
Rub bread slices with with 1 tablespoon of olive oil. Sprinkle garlic flakes and a pinch of salt – pepper. To toast the bread; place them into the oven just before 4 – 5 minutes you take the frittata out.
You can serve the frittata with toasted sourdough bread slices.
