Boil 1,5 water glasses of water. (300 ml)
Wash and drain risoni (under cold water).
Take a pot on the stove. Heat it over medium heat and melt the butter.
Add risoni. Sautée for 1 – 2 minutes by mixing.
Then add the hot water. Add 1 teaspoon salt - pepper and stir. Cook for 7 – 8 minutes until water totally disappears (The lid is closed.)
Drain garnish mix and pass it through the cold water.
Add the garnish to the pot just before 4-5 minutes you take the pot from the stove. Stir, mix and continue cooking.
For Tzatziki; Chop the cucumber into small size cubes or grate it. If you grate, squeeze it in your hands to take out excess water.
Add yoghurt and ½ glass of water to a mixing bowl. (Do not add water if you want your tzatziki to be thicker.) Add cucumber, mint, garlic flakes and ½ teaspoon of salt.
You can serve Risoni & Vegetables with Tzatziki.
